Weber Performer Review: Is This the Ultimate Charcoal BBQ?

Summer might be winding down, but it certainly ain’t over yet. There are still plenty of long evenings, garden gatherings and weekends that call for cooking outdoors. And if your old barbecue has seen better days, the Weber Performer Charcoal Barbecue 57cm could be just the excuse you need to keep the BBQ season going.

At £479, this is not a budget charcoal BBQ. It is a premium take on Weber’s iconic kettle, adding a proper work surface, storage and a clever cart design to an already proven cooking system.

But does it actually make charcoal barbecuing better, or are you simply paying more for somewhere to put your tongs?

Weber’s Performer makes a pretty convincing case for the former.

What is the Weber Performer?

The Weber Performer takes the familiar Weber kettle BBQ and puts it on a much more practical platform.

The 57cm porcelain-enamelled kettle remains the star of the show, but underneath it is a sturdy cart with a side table, storage shelf and Weber Works accessory system. There is also a lid holder, hinged cooking grate and Weber’s One-Touch cleaning system.

In other words, it is still a classic charcoal BBQ, but someone has finally thought about what happens before and after the sausages hit the grill.

And that matters.

Anyone who has cooked on a basic kettle knows the slightly chaotic routine. Where do I put the raw chicken? Where are the tongs? Why am I holding a plate under my arm? Where can I put the lid?

The Performer answers most of those questions before you’ve even lit the charcoal.

Technology without the gimmicks

The Performer is not a smart BBQ. There is no Wi-Fi, app or touchscreen telling you that your burgers are ready.

And honestly, that is no bad thing.

Instead, Weber has concentrated on the technology that actually matters when cooking over charcoal. Adjustable dampers in the lid and bowl allow you to control airflow and therefore manage the temperature inside the kettle.

More oxygen means a hotter fire. Less airflow helps bring the temperature down.

It sounds simple because it is, but mastering airflow is one of the keys to getting consistently good results from a charcoal BBQ.

There is also a built-in lid thermometer, which makes it possible to keep an eye on the overall cooking temperature without constantly lifting the lid and letting precious heat escape.

For serious low and slow cooks, we’d still recommend a separate digital probe thermometer. The built-in gauge is useful for monitoring the BBQ, but it does not tell you the precise temperature at the food.

Cooking performance

This is where the Weber Performer really comes into its own.

The 57cm cooking grate provides 2,342cm² of cooking space, giving you plenty of room for a family barbecue and enough space to create separate heat zones.

That means you can sear steaks directly over hot charcoal while keeping another part of the grill cooler for finishing them gently. You can cook chicken indirectly, roast larger joints or spend several hours cooking ribs without turning the BBQ into a blazing inferno.

And yes, you can still throw a few burgers on it on a Tuesday evening.

That versatility is one of the biggest reasons to consider the Performer over a cheaper kettle.

Direct grilling

For classic BBQ food, the Performer can generate the high temperatures you want for properly browned burgers, blistered vegetables, sausages and beautifully seared steaks.

Charcoal brings its own character too. That combination of intense heat, smoke and caramelisation is difficult to replicate indoors.

Indirect cooking

Move the charcoal to one side and the kettle becomes a completely different beast.

With the lid closed, the Performer can work much more like an outdoor oven. This opens up possibilities including roast chicken, pulled pork, ribs and larger cuts of meat.

It is this ability to switch between fast, high-temperature grilling and slower cooking that makes the Weber kettle design such a classic.

Food quality: this is why you buy charcoal

Let’s be honest. You do not buy a £479 charcoal BBQ because you want to spend less time cooking.

You buy one because charcoal makes food taste fantastic.

The Weber Performer gives you the ability to build a proper fire, control it and cook over it. Steaks get a serious crust. Burgers develop those lovely charred edges. Chicken can be cooked gently before finishing over direct heat.

Vegetables are particularly good on charcoal too. Corn, peppers, aubergines and even little gem lettuce can pick up a smoky, charred flavour that turns a simple side dish into something much more interesting.

Then there is the option of adding wood for extra smoke. Suddenly, the weekend barbecue becomes a proper outdoor cooking project.

That is perhaps the most appealing thing about the Performer. It is capable enough for enthusiasts without being so complicated that you need a degree in barbecue science before lighting it.

The 57cm size is a sweet spot

At 57cm, the Performer offers a generous amount of space without becoming an enormous outdoor kitchen.

The cooking area is large enough to feed a family and comfortably cater for friends, while the round kettle shape still makes it relatively straightforward to manage different cooking zones.

For anyone who likes hosting, this is particularly useful. You can cook several different foods at different temperatures rather than trying to cram everything over one blazing-hot area.

The features you’ll appreciate most

Hinged cooking grate

This is one of those features that sounds insignificant until you have used it.

There is also a storage shelf underneath, giving you somewhere to keep charcoal, tools and other BBQ essentials.

It transforms the Performer from a barbecue into something much closer to a compact outdoor cooking station.

Is the Weber Performer worth £479?

This is the big question.

There is no shortage of cheaper charcoal BBQs. If all you want to do is cook burgers a few times each summer, you absolutely do not need to spend £479.

But the Performer is not really aimed at that buyer.

You are paying for the complete experience. The proven Weber kettle cooking system comes with a proper worktop, storage, integrated lid holder, hinged grate, cleaning system and accessory compatibility.

For someone who cooks outdoors regularly, those extras quickly stop feeling like luxuries.

The biggest question is whether you will use them.

If your BBQ spends most of the year gathering dust in a shed, save your money. If you are the person who gets excited about charcoal, rubs, marinades, indirect cooking and the possibility of cooking dinner outside even when everyone else has gone indoors, the Performer starts to look considerably better value.
